Our Story
After being diagnosed with an autoimmune disease and working my way to remission using AIP, I saw first hand the many challenges the protocol presented. I also saw it’s incredible healing impact. And so from my own struggles, the idea of creating a way for others to follow an AIP diet while still having enough hours left in the day to take care of themselves and reach remission, became my mission. And Urban AIP was born.

Marie-Noelle Marquis CEO
Marie-Noelle is an AIP Certified Nutritional Therapy Practitioner focusing on helping women with autoimmune conditions live symptoms free and thrive. With a background in restaurant management for more than 17 years Marie-Noelle is well equipped to optimize the business operation and lead staff. Marie-Noelle also worked as a filmmaker, director and producer for 20 years and led teams of up to 150 people under tight deadlines, always delivering. Between 2014 and 2018, Marie-Noelle worked as magazine editor and social media manager for a wildlife rehabilitation center, and brings her marketing and design expertise to Urban AIP as well.
Carla Farrow
Chef Consultant
Carla is a passionate and compassionate first-generation Mexican Culinary Chef Consultant with extensive international experience. Carla’s culinary expertise extends to accommodating diverse dietary protocols and needs, including vegan, vegetarian, gluten-free, and food allergies. Carla also shares her knowledge and experience by mentoring aspiring chefs and supporting small business start-ups in the culinary industry. She provides invaluable guidance and helps navigate the complexities of the industry, empowering emerging culinary entrepreneurs. Carla adds a unique flavor to the menu offerings of Urban AIP, and her strong commitment to quality, ensures that no corners are cut in delivering nutritious and delicious meals to customers.
Shira Katz Research & Development
Shira has over a decade of experience working in the fine dinning culinary industry and developing new flavors. She is particularly passionate about food preservation, fermentation and developing new flavors for the AIP market. With a degree in Food Science, Shira works closely with our founder developing new products for our grab-n-go line and is in charge of quality control.
